    Great job.

    We actually decant almost every wine we drink, with the exception of sparkling wine, though I'm going to experiment with that at some point.

    It is also fun to get two bottles of the same wine, decant one and not the other, then re-bottle and serve them “blind” in terms of knowing which is decanted vs. not. It really is the only way to see how something can be (or not) helped by some aeration.

    Kevin,
    I love the idea of doing the blind decanting test! Watch at friends of ChrisO. I find decanting to be very important in most young wines. I often try the wine before decanting, then write some notes and then taste the wine after 30 -45 minutes of decanting and then compare my notes. Usually an eye opening experience.
